Where It Comes From:
This honey is exclusively harvested from Mount Erymanthos in the Peloponnese, Greece, a Natura 2000-protected area renowned for its importance to wildlife. Vasilis' bees roam at over 1,000 metres, collecting sap from the Black Mountain Fir tree to create this exceptional honey.
More on Honeydew Honey:
Fir tree honey is a honeydew honey, which means it’s made from tree sap with the help of aphids rather than flower nectar. Honeydew honeys are high in oligosaccharides, known for their prebiotic qualities that aid digestion.
What does "Active" mean in the product title?
The "Active" label refers to a lab test measuring the honey's total antimicrobial activity, which is tested against Staph Aureus bacteria. The activity level is mainly caused by an enzyme that creates hydrogen peroxide in the honey. The honey's antimicrobial properties are strongest after testing and decrease over time, especially if exposed to light and heat. To preserve the activity level, it’s best to store the honey in a cool, dark place.
About the Beekeeper:
This rare honey is brought to us by Vasilis, a dedicated organic beekeeper from he Peloponnese whose honey has won many awards. His hives are located in the remote wilderness of Mount Erymanthos, where his bees thrive in pristine, roadless conditions, contributing to the honey’s unique purity and flavour.
How Raw Honey is different from Processed Honey:
Raw honey generally means the honey has not been processed; it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually drained of pollen, heated, and blended. Raw honey tends to vary from batch to batch because it is not processed in a factory, filtered, or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Crystallisation:
Raw honey can crystallise due to its natural glucose content. This process is natural and does not affect the quality of the honey. If you prefer your honey runny, gently warm the jar to return it to a liquid state.
