Beautiful and pure, a wonderful Organic Sidr from the dense forests of Northern Greece. Bought to you from from beekeeper Dimitris, a dedicated artisan beekeeper whose bees have produced this wonderful harvest of Sidr honey. 

Dimitris Raw Organic Greek Sidr honey, You will find that its thick with a rich herbal sweet taste and vanilla notes. It is not like dark tree honeys such as Oak or Chestnut.

The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey.

Colour: It has a strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised.

Where it comes from: This Sidr comes from the the dense forests of Mountain Belle in Northern Greece. It is an unparalleled ecosystem, extremely rich in flora and fauna. Belles is a mountain range, between Northern Greece, Bulgaria and Skopje. 

More on this honey: Sidr Honey is among the finest variants of honey in the world. It comes with a distinctive taste, and is known for its antibacterial qualities. This honey is considered sacred in Islam and is mentioned in the Qur'an.

About the beekeeper: This sidr was brought to us by Dimitris and his Father Kostas who live in a very wild area of Greece. His hives are situated deep in the forest surrounded by Sidr trees, miles from places where pesticides, herbicides and fungicides are used.

What does "Active" mean in the product title? We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. the honey is graded according to the amount of bacteria that the honey solution kills. Generally, the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey. The main antibacterial activity is caused by a bee enzyme that creates hydrogen peroxide in the honey. Please bear in mind that the Activity Level is at its highest when we test it and will decrease over time. This will happen faster if the honey is exposed to light and heat. Storing the honey in a dark cool place will help to slow down the rate at which the Activity Level decreases.
