This set of raw Greek honey is brought to us by Thomas and his family. Thomas is a young Greek beekeeper, who is planning to take over his family's hives, which are in secluded forest glades in and around the mountains of central Greece. He has great enthusiasm for raw honey and natural hive products.
Presented in a Gift Box along with a honey dipper, a photo of Thomas and his family and a leaflet with the story behind the honey.
Raw Orange Blossom Honey: This honey has the slightly bitter sweetness of the orange jam that surrounds the peel in marmalade. One of the best Orange Blossom honeys we have tasted. Orange Blossom is normally a favourite of children and those who enjoy sweet and sunny honey flavours. It has a citric aroma and a hint of creamy vanilla. A great introduction to the world of raw honey. This raw Orange Blossom comes from the Laconian country, in the Peloponnese, a green and unspoilt area in the south of Greece, where the best oranges in Greece come from.
Raw Thyme Honey: Has a foretaste, which is mild and grassy like dry mountain herbs - you can really taste the thyme! - breaking into a large, fruity flavour similar to sweet and sour summer fruits such as raspberries and red currants, then dissipating quickly to a mild and clean finish. Very slight over notes of the soft sweetness of fennel or aniseed without the strong flavour of liquorice. Strong hints of Greek mountain tea (Ironwork or Shepherd's tea).
The aroma is mellow and caramel sweet, and the mouthfeel is thick and almost oily, similar to sunflower honey.
Raw Red Fir Honey: Awarded the coveted Quality Gold Award by the 2019 London Honey Quality Competition. It starts with a mild nuttiness then explodes into a bold, juicy sweetness with hints of savoury herbs and a slight sourness in the aftertaste, similar to the sourness experienced at the end of blackstrap molasses. The taste lingers sweetly on the palate for a good time.
It has grassy, herbaceous smell lingering within the honey sweetness mild and green somewhat similar to fennel or winter savoury.
This Fir tree honey is harvested from altitudes of at least 1500 metres on a mountain close to Argithea in Greece.
It is a dark thick runny honey. Like the Pine, Fir is known as a honeydew, because it is from the sap and resin of the tree not from flower nectar. Honeydews are high in oligosaccharides, which aid the good bacteria in the gut that aid health.
How Raw Honey is different from Processed Honey: Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
