During my travels and tastings, I’ve encountered many Pine honeys, but we have never previously had Pine honey from three distinctive Pine tree varieties at one time. Each honey tells its own story, shaped by the Pine variety it comes from, its unique region, the bees and the passionate beekeepers behind it. This collection is a one-off. I doubt we will ever have such a diverse trio again. I’m excited to share these with you, bringing the flavours of these three top quality Pine honeys to your table.

1. An exceptional raw artisan Pine Honey from the Cantabrian Pine trees on the island of Thasos via beekeepers Triantafyllos and his father Grigoris.

When I first tasted this sample of Pine Honey from the Cantabrian Pine trees on Thasos, I was immediately struck by its exceptionally thick consistency – unlike any honey I had encountered before (apart from Vanilla Fir). After tasting its complex flavours, I knew this was a honey I had to share with you. I'm thrilled to present this exquisite artisan Pine Honey, a true testament to the skill of the beekeepers and the Pine trees on the Greek island of Thasos. Thasos is widely regarded as the premier location for Pine Honey in Greece.

This is one of the thickest, most luxurious honeys we've ever encountered. A bold, sweet pine aroma with warm, spicy undertones. Complex flavour profile featuring dark, dried fruits and prominent cooked fig notes. Prolonged, lingering sweetness.

Indulge in the extraordinary taste of this artisan Pine Honey, meticulously crafted by the skilled beekeepers Triantafyllos and his father Grigoris (who previously supplied us with a London Honey Awards Gold Winning Spring Pine from Thasos).  

2. Distinctive raw Pine honey from the Macedonian Pine, produced by the bees of organic beekeepers Dimitris and his Father Kostas.

Dimitris and Kostas' Pine honey has the strongest 'nose' of any of our other Pine honeys. It also differs, being from the Macedonian Pine, a Balkan Pine variety. Most Greek Pine honey is from the Aleppo Pine.

It is created by the bees of a passionate father-son beekeeping duo, Dimitris and Kostas, in the picturesque and wild region of Serres, Northern Greece.   

On the palate, the prominent pine essence is beautifully balanced by subtle hints of dark, dried fruits, particularly reminiscent of dates and figs. A delicate, earthy undercurrent adds a grounding element to the honey's flavour, creating a harmonious and satisfying taste experience.

3. Raw artisan Greek organic Pine honey from the Aleppo Pines that grow on the island of Evia via beekeeper Thomas.

Thomas' Pine honey is a unique gem from the island of Evia. This honey is a sensory delight with its strong, sweet pine aroma complemented by waxy, spiced overtones, akin to cloves and other winter spices. The flavour journey begins with an immediate rush of sweetness, transitioning into rich notes of dark, dried fruits and cooked figs, and culminating in a lingering sweetness that delights the palate.

Harvested in Papades, a remote and untouched place on Evia, Thomas' Pine honey captures the essence of this island's pristine wilderness and abundant Aleppo pine forests. Each jar reflects Thomas' dedication to preserving the natural flavour and purity of his homeland through his beekeeping practices.

Suggested Uses: Pair Pine honey with aged cheeses like Manchego or Pecorino Romano to enhance the complex flavours with its natural sweetness. To create a delightful cheese platter, arrange slices of your chosen cheeses on a serving board. Drizzle Pine honey over the cheese. The honey's sweetness perfectly balances the sharp, savoury notes of the cheese, creating a harmonious and sophisticated flavour combination.

For a refreshing and unique addition to salads, create a luxurious dressing by blending Pine honey with olive oil, lemon juice, and Dijon mustard. This dressing pairs beautifully with a mixed leaf salad, incorporating ingredients like rocket, spinach, and watercress, topped with toasted nuts, goat cheese, and slices of pear or apple. The honey will bring a touch of sweetness that elevates the overall flavour, making your salad both delicious and memorable.
