The "Active" label refers to a lab test measuring the honey's total antimicrobial activity, which is tested against Staph Aureus bacteria. The activity level is mainly caused by an enzyme that creates hydrogen peroxide in the honey. The honey's antimicrobial properties are strongest after testing and decrease over time, especially if exposed to light and heat. To preserve the activity level, it’s best to store the honey in a cool, dark place.

Raw honey tends to vary from batch to batch because it is not processed in a factory, filtered, or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Crystallisation:
Raw honey can crystallise due to its natural glucose content. This process is natural and does not affect the quality of the honey.
