There’s a story behind this potent honey, one that the Greeks have known about since ancient times—it is highly antibacterial. What isn't generally known is that there are many different varieties of the Oak tree, and each jar in this set is from a different variety of Oak.

Thomas's Raw Organic Greek Mountain (Greek) Oak Honey – 1kg

Thomas' Raw Organic Mountain Oak Honey is exceptionally thick and sits solidly on the tongue, taking a moment to melt away. This Mountain Oak Honey comes from a forest that grows on a mountain by a lake near Rentina, Greece, where nature thrives in a biodiversity hotspot.

Flavour

This honey offers a rich, mineral-like treacle flavour with undertones of cooked apples and plums. Its fleeting aftertaste carries a hint of sourness, while the aroma is reminiscent of cold spiced fruit sauces, evoking a warming, fruity richness that lingers.

Antonio's Raw Organic (Pyrenean) Oak Honey – 1kg

A Platinum award-winner at the Great Taste Awards 2022, this Oak Honey (from the Pyrenean Oak) is a unique and exquisite variety. It comes from the Sierra del Rincon UNESCO Biosphere Reserve in Spain, where oaks thrive at an altitude of around 1,100 metres in an extremely wild and untouched environment free from chemical treatments.

Flavour

This honey has a deep earthy taste with lots of malt and a touch of smokiness. It is quite savoury and less sweet than other types of honey, making it a unique and robust choice for honey connoisseurs.

Producer Story

Antonio Simon, a fourth-generation beekeeper, produces this honey using traditional, organic methods. His hives are located in the mountain ranges north of Madrid, in one of Spain’s most pristine natural areas, ensuring that every jar is as pure and natural as it gets.


Kostas' Organic Greek Mediterranean (Holm) Oak Honey – 1kg / Active 25.5

This batch of Mediterranean Holm Oak Honey is the most potent in the set, boasting an impressive Active 25.5 rating. Collected from the rugged Peloponnese region of Greece, this honey is a product of the evergreen Holm Oak, a hardy tree that thrives in arid soils and contributes to the honey’s distinctive character.

The set includes a beautifully handcrafted olive wood honey dipper, made by Spiros in his workshop on Corfu, Greece. What Does "Active" Mean?

The "Active" rating represents the honey’s antimicrobial activity, tested in a lab against Staph Aureus bacteria. A honey’s score is based on its effectiveness in killing bacteria, and this test is similar to the grading system used for Manuka Honey. Activity levels are at their peak when tested and will decrease over time. Exposure to light and heat accelerates this process, so storing the honey in a cool, dark place will help preserve its activity for longer.


Plant/Tree Origins

Oak honey mainly comes from a sweet fluid that weeps from acorns, which bees collect directly. In some cases, Oak honey is also derived from tree sap collected by aphids, which bees gather from leaves and branches. Each jar in this set comes from a specific variety of Oak tree:

  • Holm Oak (Quercus ilex): Kostas’ honey.
  • Greek Mountain Oak (Quercus graeca): Thomas’ honey.
  • Pyrenean Oak (Quercus pyrenaica): Antonio’s honey.

Colour

Oak honey is one of the darkest honeys, ranging from deep brown to nearly black when jarred. Its rich appearance reflects its robust flavour profile and the unique source trees.

Why Raw Honey is Different from Processed Honey

Raw honey generally means the honey has not been processed; it has come from the hive to the jar with minimal interference. Most commercial honey is highly processed to make it look more attractive; it has been drained of pollen, often heated, and blended. Raw honey tends to vary from batch to batch because it is not processed in a factory, filtered, or heated to look homogeneous. It changes with the season, climate, and the bees’ diet.
