Who produces the honey?
The bees of Antonio Simon, a 4thgeneration beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are mainly based in the mountain ranges of north of Madrid. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid.
Raw Organic Wild Lavender Honey
This is a light and pleasing herb flower honey, it has floral notes and a creaminess like vanilla - but doesn't have quite as strong a flavour as honey from cultivated lavender. This honey comes from bees feeding on the wild lavender bushes in the Sierra del Pradena.
The oil from lavender is widely used as an essential oil in aromatherapy, because it is said to aid relaxation and sleep. Wild lavender honey is good for protecting and soothing abrasions and burns (although obviously see your doctor if it is a bad abrasion or burn). It is also especially good poured over cheese! And because it is so mild children love it on its own and appreciate the subtle taste.
Raw Organic Eucalyptus Honey
This is a really beautiful tasting honey; it has a wonderfully fruity creaminess along with a very mild eucalyptus/menthol aftertaste. Suitable for all ages as it is not overbearing in any way. This is a relatively light-tasting tree honey. It shares characteristics with other herbal honeys, such as thyme or sage.
Eucalyptus honey is a variety with a unique composition. It contains traces of eucalyptol which gives it its fresh revitalizing taste. This essential oil is often used in aromatherapy as a decongestant and antiseptic.
Raw Organic Oak Honey
This is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content. This Oak is a London Honey Awards and a Great Taste Award Winner!
This variety of oak honey comes from trees growing at the Sierra del Rincon UNESCO Biosphere Reserve, where no chemical treatments are allowed. The trees grow at around 1100 metres in an extremely wild and untouched place.
Most Oak honey comes from the acorns of the oak tree. The bees collect a sweet fluid that the acorns weep in July and August and from this the bees create a unique type of honey. Other types of tree honey are produced solely from the residue left by the activity of aphids on trees - but this is not the case with the oak honey. The bees directly collect the sweet fluid mainly from the acorns. It tends to be less sweet than other honeys and can be very potent.
Antonio's Raw Organic Multifloral Honey
This honey generally has a light and creamy flavour with a slight menthol taste and a good amount of floral wild flowers, though it can also have a much darker and bolder flavour depending on the batch. This variety makes for a great entry point to the world of raw honeys.
This Multifloral honey comes from a remote village called Patones, located in the Jarama Valley in the northeast of Madrid, Spain. It is a certified organic zone.
Multifloral honey varies widely depending on the areas the bees have been feeding on, it can be wild meadows or forest flowers or just a mix of any flora in the local area. This honey is particularly good to use as a skin treatment to aid in clearing blemishes, spots and acne.
How Raw Honey is Different from Processed Honey
Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Crystallisation
Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly. If you want your honey runny and it has crystallised it's very easy to return it to runny go to this link Runny Honey or see this section under our FAQ's Why Is My Honey Crystallised?

Best honey I've had in many years
My search for real honey has ended, this is some of the best honey I have ever had especially the eucalyptus. Will be trying the forest honey next God willing.
4 jars of honey
Great products as always from the raw honey shop. Will be buying again. I use these diff honey's to improve the gut bacteria. I give it to the whole family. Can be eaten directly. Applied on toast, cereals or whatever one desires. Best not to mix it with hot food in order to preserve the good bacteria. The quality of honey from the raw honey shop is always superior from others.
Fine
The honey is nice, but the aggressive post sales emails begging for a review are very wearing. Will probably shop elsewhere in future.
Excellent honey
I ordered a variety of honeys, they’re fairly priced for the excellent quality they offer. Packaged very well and the lime honey I received as a gift is now by far my new favourite!
