Antonio's raw organic rosemary honey has a light and subtle flavour of rosemary, very delicate yet quite sweet with a soft floral note. It is the most popular honey in Spain.
More on the flavour: This is a very light and pleasant herb flower honey, it has a creamy floral taste with a noticeable hint of rosemary in the flavour. It comes from the bees feeding on small flowers on the Mediterranean rosemary plant and is quite different from the tree honey which comes from sap. This honey tends to be very mild and subtle and sets quicker than others.
Colour - This particular honey is a pale orangey yellow colour when runny (shown in the image with the honey dipper) turning a light creamy yellow when set or crystallised.
More Rosemary Honey Facts: Rosemary honey tends to be a very light honey with a mild flavour, it has been a prized honey throughout history from the Romans to the French monks who would collect and store it.
Where does the honey come from? This variety of rosemary honey comes It comes from Patones – which is in the foothills of the Sierra de Guadarrama mountain range in Northern Spain – an area with perfect conditions for Rosemary.
What about the plant the honey comes from? The herb is an evergreen plant growing up to 2 metres in height. You see it everywhere on the wild hillsides in Spain in March. Rosemary. It is also known as romero in Spanish, which means dew of the sea when translated from Latin as it would often be found by the sea boasting beautiful blue flowers.
Common Uses: Rosemary honey is particularly good to use in salad dressings.
Who produces the honey? The bees of Antonio Simone, a 4th generation beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are mainly based in the mountain ranges of north of Madrid. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid

The rosemary honey is my favourite firstly because of the wonderful flavour. It evokes happy memories of living in Spain; warmth, sun and the enormous rosemary bush that lived outside our kitchen window. Crystallisation:- Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly. We only supply raw honey because we believe this is how all honey should be. If you don't want your honey to crystallise then raw honey probably isn't for you.
