Flavour

This honey offers a truly unique flavour journey. It begins with rich, earthy undertones from the Oak honeydew, before evolving into a spicy herbal finale, enhanced by the wild oregano and other aromatic mountain herbs. Each spoonful is a testament to the diversity of tree and flora found only on Mount Olympus.

Colour

A dark amber hue characterises this honey, reflecting its richness and complexity. Over time, it may crystallise, resulting in a slightly lighter, creamier appearance—proof of its raw and natural state.

Origin

Harvested from the biodiverse forests on Mount Olympus, this honey is nurtured in an environment of unparalleled natural beauty. As a UNESCO-protected site, Mount Olympus offers pristine conditions, fostering unique microclimates and an array of flora that cannot be found anywhere else in the world.

Producer Story

Dimitris, an award-winning organic beekeeper, is the artisan behind this honey. His hives are strategically placed in the heart of Mount Olympus, allowing his bees to forage from its trees and rare herbs. Dimitris’ philosophy of letting honey remain as nature intended ensures that every jar reflects the purity and richness of this extraordinary environment. He is focused on quality above all else and spends a great deal of time seeking out the best places for his hives, where the honey may benefit from the unique terroir of the locality.

Common Uses

Enjoy this honey in a variety of ways:

  • Drizzle over creamy Greek yogurt for a decadent breakfast.
  • Pair with aged cheeses for a gourmet platter.
  • Add depth to herbal teas or craft cocktails.
  • Use as a glaze for roasted meats or vegetables.
  • Blend into salad dressings for a unique, earthy sweetness.

How to store your honey

To preserve the natural potency and unique qualities of this honey, store it in a cool, dark place. Exposure to light and heat can degrade the beneficial enzymes that contribute to its antibacterial activity. Keeping it away from light and high temperatures will help maintain its rich flavour, texture, and active properties, ensuring it remains as nature intended.

Why Raw Honey is Different from Processed Honey

Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, it has been drained of pollen, often heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous, it changes with the season and climate and what the bees feed on, we will update this fact sheet according to which batch we currently have in.

Crystallisation

Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot accept returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly. For more details on crystallisation, check our Runny Honey Guide or visit the section on honey crystallisation.
