Please note this honey has either passed its best before date or has a very short best before date which is the reason why this item has been discounted.  Honey never goes off so it is perfectly safe to eat.  The best before date is purely an indication of when the honey is likely to crystallise. 

Plamen's raw lime tree (linden) honey has a heady floral aroma strongly reminiscent of linden blossoms.  It makes us think of springtime picnics surrounded by flowers. The flavour is similarly powerful, almost as though the flowers themselves might be in the honey. In addition to the strong linden taste, it reminds us of sweet violets and has a pleasingly mild acidity, which makes the honey not particularly sweet - somewhat unusual for lighter-coloured honeys.

Colour: Lime tree (linden) honey is quite light in colour. It's slightly darker and more brassy than acacia honey when runny, turning a very pale yellow when crystalised, similar to the colour of lemon curd.

Where does the honey come from? This honey comes from the forests around the village of Panchevo, located in the Sredets Municipality.  It is a tucked-away, rural area in southeastern Bulgaria, quite near the border with Turkey and not far from the Black Sea.  It enjoys lovely warm weather in the summers and is covered in forested hills.

Who produces this honey? This honey comes from Plamen.  He is a natural, traditional, organic beekeeper, following on from generations of family beekeepers before him.  He lives with his wife and son in a little stone and wood house, sat in a meadow, faced by beehives.

What about the plant the honey comes from? The lime tree, also known as linden, or basswood in America, is a type of Tilia tree. They are known to produce generous amounts of sweet smelling nectar which draws bees from all around, these trees can live over 1000 years and grow up to 100 foot tall. They have been revered throughout history for over 2000 years and were known as the mystical tree of life.

Common Uses: Lime honey is particularly good to use on irritated skin, it has a soothing effect and can help repair wounds, infections and eczema. It is also very versatile in recipes such as: cakes, desert toppings, and salads. This is because its tart flavour adds a real zing to dishes.
