Please note the current batch is a little bit darker in colour and stronger in taste than previous batches. This is because the bees have collected nectar from Crataegus, from which liquorice is extracted.

Rossend's raw Pyrenees Mountain honey has a very light taste of creamy vanilla and light flower blossoms. One of the most popular varieties due to its clean refreshing flavour. It is suitable for all of the family.  It wins awards year after year including in the Great Taste Awards and the International Taste and Quality Institute (iTQi ) awards in which it won 3 stars one year. The iTQi is a world-renowned organisation of chefs and sommeliers.

More on the flavour: This is a very beautiful tasting multifloral mountain honey. This batch is particularly floral and fruity from bees feeding on the trees, bushes and plants in the Pyrenees Mountains in the area of Cerdaña. It's not just the liquorice, there is Ononis, which is used as a herb for bladder and kidney issues. There's also quite a lot of Hawthorn in this honey. The main nectar is from Rhododendron (but not the variety you get in the Himalayas, which 'mad' honey comes from, the famous hallucinogenic honey).

When the bees feed on plants at higher altitudes it is said they get a higher quality of honey as the air is cleaner, the land unspoiled and the soils richer in nutrients for the plants that grow on them.

Where does the honey come from? This variety of Pyrenees honey comes from Cerdaña in the Catalonian Pyrenees, an area known for pristine forests, high peaks and heavenly meadows, rushing rivers, winding streams and thundering waterfalls.

Who produces the honey? This Pyrenees honey comes from Rossend. He treats honey like and art form and you can really tell, it has such a perfect consistency and the varieties range from very subtle to very overt. He has won many awards for his honey including from the well renowned iTQi (International Taste and Quality Institute) who rated several of his honey varieties in the superior taste award category.

Common Uses: Pyrenees honey is particularly good to use in different recipes, such as: salads, an accompaniment with cheeses, adding to meat as a glaze and beautiful in a light herbal tea.

Honey Facts: Pyrenees mountain honey is much sought after. Any honey that comes from the mountain areas is often in higher demand, this is often due to the higher quality and the beautiful taste it has.

Crystallisation:-  Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised).
