Product Highlights

  • Origin: Harvested from sweet chestnut forests in Castelo Rodrigo, Portugal.
  • Quality: Certified organic and raw, ensuring natural purity.
  • Flavour: Deep, malty sweetness with caramel undertones and a touch of bitterness.
  • Colour: Mid to dark brown with reddish hues; lightens to caramel upon crystallisation.
  • Producer: Antonio Simon, a dedicated fourth-generation beekeeper.

Aroma

Antonio's Chestnut Honey exudes a robust and earthy aroma, reminiscent of the sweet chestnut blossoms from which it originates.

Flavour

This honey presents a complex taste profile: a deep, malty sweetness complemented by subtle caramel notes, a nutty essence, and a slight bitterness. Some liken its richness to that of maple syrup, though more intense and malty.

Colour

In its liquid state, the honey showcases a mid to dark brown hue with reddish tinges. Upon crystallisation, it transitions to a paler caramel shade.

Origin

Sourced from the sweet chestnut forests of Castelo Rodrigo in Portugal, Antonio's bees collect nectar and sap from the Castano trees, resulting in this unique honey variety.

Producer Story

Antonio is a pioneer of organic beekeeping in Spain. His hives are mainly in Spain’s Sierra de Guadarrama north of Madrid, with some in Portugal to adapt to climate challenges. Working with his son Dani and son-in-law Ruben, he produces certified organic raw honeys (chestnut, oak, lavender, eucalyptus) and teaches beekeeping. He is sought worldwide for his ethical, organic practices.

Common Uses

  • Baking: Enhances cakes, cookies, and dessert toppings.
  • Beverages: Sweetens warm teas and specialty drinks.
  • Salads: Drizzled over fresh greens for added depth.
  • Meat Glazes: Complements roasted meats with its complex sweetness.
  • Cheese Pairings: Pairs exquisitely with a variety of cheeses.

How to store your honey

To preserve its natural potency and qualities, store the honey in a cool, dark place. Light and heat degrade the enzymes that contribute to antibacterial activity. Keeping it away from light and high temperatures helps maintain its flavour, texture, and active properties.

Why Raw Honey is Different from Processed Honey

Raw honey means it comes from the hive to the jar with minimal interference. Most supermarket honey is processed to look attractive—drained of pollen, heated, and blended. Raw honey varies from batch to batch because it is not factory-processed, filtered, or heated to be uniform. It changes with the season, climate, and bee forage.

Crystallisation

Please note that raw honey crystallises naturally (therefore we cannot accept returns on crystallised honey). We list each honey as runny or crystallised based on our best knowledge, though the state may change quickly. For details, check our Runny Honey Guide or the Wikipedia section on honey crystallisation.
