Description

Raw Greek Sidr Honey - Active 21.5 - 1kg

This Raw Greek Sidr comes from beekeeper Asterios who has his hives in the dense forests of Northern Greece, close to the border with Turkey. It is one of those places that pulsates with life. The area is full of Sidr trees, where bees collect nectar and honeydew to produce this rare and prized honey. The untouched environment, teeming with wild animals and insects, ensures a pure, natural honey with no contamination from pesticides. This Sidr honey has a rich, herbal sweetness with slight vanilla notes, making it truly special. It is very pure, so you may find the flavour more intense than most Sidr's.

Flavour

This Sidr has a rich, smooth texture with a deep amber hue. The flavour is complex and indulgent, often noted for its sweetness with hints of fruitiness and a touch of spice or caramel. This honey leaves a lasting impression, with floral and earthy undertones, appealing to those who enjoy more sophisticated flavours.

About the Beekeeper

Asterios is fortunate to live in a remote area in northern Greece, surrounded by forest, wild scrubland, and mountains. He takes his bees to these pristine wild places, where they produce high-quality honey, such as Sidr. Asterios views beekeeping as an art form, focusing on producing amazing honey and ensuring his bees are happy and healthy.

How Raw Honey is Different from Processed Honey

Raw honey is minimally processed, meaning it’s packed with natural enzymes, pollen, and nutrients that are often lost during processing. Most supermarket honeys are processed to create a uniform appearance, often being drained of pollen, heated, and blended. Raw honey changes in flavour, colour, and texture depending on the season and the flowers that bees feed on, making each batch unique.

Crystallisation in Raw Honey

Raw honey tends to crystallise over time due to its natural glucose content. This is a natural process and does not affect the quality of the honey. For more information on why honey crystallises, visit our blog or check Wikipedia for a more scientific explanation.
