A one-off for Raw Honey Shop customers.  An award-winning rare Spring Pine honey that we have never had before and may never have again.
Once it is gone it is gone.


The background: This is a one-off - a rare Pine honey that we may never get again. I discovered this on a trip to Greece this Spring. Unusually this one was produced in the Spring, which rarely happens because the conditions are usually only right in the autumn. I knew it was good as soon as I tasted it and I immediately entered a sample for the London Honey Awards. It won Gold. We were lucky to secure all of this batch and once it is gone it is gone. 

Greek Artisan Spring Pine Honey -This is an unusual and rare Pine honey, that has the best flavour I have ever tasted in a Pine honey. It has a strong, sweetly pine aroma with spiced overtones, similar to cloves or other warm, winter spices.  The flavour starts with a strong sweetness, which comes on very quickly with dark, dry fruit and prominent cooked fig flavour, finishing into a sweetness that lingers at the back of the throat. This Pine has one of the longest 'finishes' I have found in Pine honey.

Where does the honey come from?: This variety of Greek pine honey comes from the island of Thasos, the best place in Greece for Pine honey. Our opinion is that this is the best of the best.

Who produces this honey?: We have Asterios to thank for this. He is one of the most genuine people you could ever meet. His aim is always to present to us the highest quality honey possible. He is lucky enough to have an amazing network of fellow artisan Greek beekeepers. He introduced us to two such beekeepers, Triantafyllos and his Dad Grigoris whose bees produce this Pine honey. Their beekeeping is an art and they produce amazing honey from happy bees.

What about the tree the honey comes from?: The Calabrian pine tree is part of the conifer family, a resinous evergreen that can grow up to 80 metres in height. They generally live between 100 and 1000 years, sometimes even longer, the oldest one to date was found to be 4900 years old!

Common Uses: Pine honey is particularly good to use in Greek yoghurts, breads and ice cream, but perhaps best is to simply enjoy this delicious prized honey on its own.
