Discovering this Red Fir Honey was an adventure. I’d been searching for the perfect honey for a honeycomb chunk product for years. Then, during a little adventure back in June 2023, I found it. Here’s the story behind this exceptional honey.

One evening, Thomas told me, "Tomorrow we are going to Mount Kaliakouda. You are going to love it there." Early the next morning, Thomas and his Uncle Stefanos picked me up from my hotel. We left the plains of Thessaly and headed towards the mountains, Stefanos driving his pickup truck filled with the intoxicating aroma of honey and beeswax.

The journey took us through gorges and hairpin bends, passing quaint mountain villages where old men sipped coffee, watching the world go by. Higher and higher we climbed, until we passed through the clouds. Finally, we arrived at a secluded forest wilderness, surrounded by towering Fir trees and a carpet of wildflowers untouched by pesticides or herbicides.

The air was pure, and the bees buzzed tirelessly, working the Fir trees to create their unique honey. While I took photos, Thomas and Stefanos checked the hives and erected fences to protect them from bears. Before we left, Stefanos handed me a chunk of honeycomb. It was superb—delicious, chewy, and perfectly complemented by the runny Red Fir Honey. At that moment, I knew this honey would be perfect for our honeycomb jars. Not only was it the most delicious honey I had ever tasted, but Fir honey also stays runny longer than most other honeys.

Why Raw Honey is Different from Processed Honey

Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, it has been drained of pollen, often heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous, it changes with the season and climate and what the bees feed on, we will update this fact sheet according to which batch we currently have in.

Crystallisation

Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot accept returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly.
