Raw Organic Wild Lavender honey is a light and pleasing herb flower honey, it has floral notes and a creaminess like vanilla - but doesn't have quite as strong a flavour as honey from cultivated lavender.

Raw Organic Oak honey : This is the Platinum award winner 2022. It's a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger  flavour and are  less likely to set due to a relatively low glucose content.

Raw Organic Heather honey is an amazingly deep tasting shrub honey; it has a depth of flavour with a pronounced bitterness similar to dark chocolate or black tea.  It comes from the bees feeding on the low lying heather shrubs often on mountainous terrain. Heather is a favourite plant of bees. Despite not being a tree, heather honey has properties of a tree honey, namely its potent taste and dark colour.

How Raw Honey is different from Processed Honey: Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.

Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
