Antonio's Organic Oak Honey (1kg) - This is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content. Antonio's raw oak honey is a unique type amongst the tree varieties. It has a deep earthy taste with lots of malt and a touch of smokiness - quite savoury and not as sweet as other varieties. This particular oak honey is very dark in colour, almost black. In some cultures, dark honey is very highly valued.
Antonio's Organic Chestnut Honey (1kg) - This is a beautiful, deep-flavoured variety. It has slight caramel notes as well as a deep sweetness and a touch of bitterness too. The nutty flavour of the chestnut carries through as well as a taste a little similar to maple syrup but slightly more rich and malty. Chestnut can lend a bitter taste to honey but not always, it is known to be one of the most varied types of honey in taste, differing greatly from one area to another and from one season to the next.
Antonio's Raw Organic Heather honey (1kg) - According to the judges in the Great Taste Awards: "Heavily aromatic. Treacly, almost fudgy in texture. There's an almost molasses richness and tinge of bitterness. Some deep meadowy flavours - more herbaceous than fruity, we feel. It has length and persistence." and "Deep brown, glossy, thick honey. The honey has a caramel aroma, and the dried fruit flavour comes through well and is rich and balanced. We would see this working well for a number of purposes - fruit, yoghurt or on toast."
How Raw Honey is different from Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
