Raw Organic Greek Mountain Forest Honey:
Kostas' bees have crafted an exquisite, dark honey from the ancient oak, chestnut and beech forests blanketing Mount Kissavos. This fertile mountain is renowned as one of the premier locations in Greece for producing complex, superior quality forest honey.
Origins:
This honey is harvested from Kostas' hives, strategically placed within the lush forests of Mount Kissavos, a designated Natura 2000 reserve. These reserves are recognized as biodiversity hotspots, home to an extraordinary variety of plant and animal life. The mountain's dense oak and chestnut tree coverage, coupled with its nutrient-rich soil, provides the ideal environment for bees to create honey of unparalleled depth and character.
Flavour Profile:
Prepare to be enchanted by the treacly, spicy notes and a subtle, pleasant bitterness imparted by the chestnut tannins - potent antioxidants that elevate this honey to a class of its own. The complex flavour profile reflects the diverse flora of the mountain's unspoiled wilderness, a testament to the thriving ecosystem of this Natura 2000 reserve.
The Beekeeper:
This exceptional honey is the result of a collaboration between two dedicated artisan beekeepers: Asterios and Kostas. Kostas, a committed organic beekeeper who served as the head of the beekeepers association in Greece for many years, brings his wealth of experience and expertise to the production of this remarkable honey.
Asterios' extensive network of artisan beekeepers, includes Kostas and that is how we were able to bring this unrivaled mountain forest honey to you. By choosing this honey, you are not only indulging in a sublime taste experience but also supporting the preservation of biodiversity within the Natura 2000 reserve.
How Raw Honey is different from Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Please know that raw honey does crystalise, which is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to Wikipedia.
