Who Produces the Honey?
The bees of Antonio Simon, a 4th generation beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are based in pristine organic areas in the mountains north of Madrid and other localities for specific floral varieties.. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid.
Raw Organic Lavender Honey
This is a light, floral honey with creamy notes that offer a warm and soothing taste, making it a favourite for many honey lovers. Lavender honey is known for its therapeutic properties, often used to aid relaxation and sleep.
Where does it come from?
This variety of Lavender honey comes from the organic lavender fields in Brihuega, Guadalajara, where the air is filled with the sweet aroma of lavender blossoms.
Colour:
A lovely deep amber colour turning to a light buttery yellow when crystallised.
More Lavender Honey Facts:
Lavender honey is good for protecting and soothing abrasions and burns (although obviously see your doctor if it is a bad abrasion or burn). It is also especially good poured over cheeses, like Manchego! And because it is so mild, children love it on its own and appreciate the subtle taste.
Raw Organic Rosemary Honey
Antonio’s Rosemary honey has always been the best rosemary we could get. This batch is even better, so much so that it won the Platinum prize at the 2022 London Honey Awards. Its delicate, floral sweetness makes it a popular choice across Spain.
Where does it come from?
This rosemary honey is harvested from Patones in the Cuenca Alta del Manzanares Regional Park, a vast wilderness area that encompasses the best region in Spain for wild rosemary.
Colour:
This honey has a light and subtle flavour of rosemary, very delicate yet quite sweet with a soft floral note. It is the most popular honey in Spain.

Raw Organic Thyme Honey
Antonio's Thyme honey has a soft creamy taste with a gentle herbal hint of thyme, subtle and slightly savoury, ideal for all the family due to its balanced and pleasing flavour.
Where does it come from?
This variety of thyme honey comes from the northern mountain ranges of Madrid in Spain known as Sierra De Guadarrama.
What about the tree the honey comes from?
The Thyme plant also known as Tomillo in Spanish, is an evergreen herb with many culinary, medicinal and ornamental uses, it tends to be found at higher altitudes as a perennial bush, it is harvested and used fresh, dried and even the oil extracted for use as a medicine.
How Raw Honey is Different from Processed Honey
Raw honey generally means the honey has not been processed and has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually drained of pollen, heated, and blended. Raw honey tends to vary from batch to batch because it is not processed in a factory, filtered, or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Crystallisation
Please know that raw honey does crystallise, and this is a natural process that occurs mainly due to the natural glucose in raw honey (therefore we cannot accept returns on honey that may have crystallised). We indicate on the website the state of each honey—either runny or crystallised—but be aware that this is to the best of our knowledge, and the state can change quickly.
